Alessandro was a Swiss born chef at Delmonico's restaurant in New York in the second half of the 1800's, as well as a cookbook author. After 25 years at Delmonico's, Fillipini retired and dedicated himself to writing cookbooks. In his recipes he gives precise measurements while most cookbooks of the time using imprecise, general measurements. The book was published by H.M. Caldwell company in 1892.
